Pecan Pickings

Phoenix... that is where I am now. Most comfortable temperature with my adoring brother and pregnant sister-in-law, what more can I ask for? My brother decided to treat me today to a 'farm' lunch - all grown at the farm.. and served fresh. This farm is about 20 minutes from Chandler at the foot of South Mountains- beautiful place with weekday and weekend breakfast and lunch options. We drove there about 1:30pm and stood in a queue for the lunch orders. I got a roasted vegetable garden sandwich and thank god could exchange with my brother for his regular sprout sandwich. The best thing about the whole trip is the studio with paintings, accessories that are sold there in consignment. All hand made by locals artists. We finished our lunch, took a walk through the garden, of course with veggies grown there, and were coming back the same way when I was intrigued (as my brother later said) by 2 ladies, 2 plastic bag each and a stiff twig in their hands.. scouring the withered leaves ...

Whole wheat eggless carrot spice cake

My friend has a potluck get-together tomorrow, since 'am leaving town the day after, I decided not to buy any new ingredient. I had carrot in the fridge, whole wheat flour and brown sugar. So here I am baking a cake with the ingredients that are available in the kitchen. It's fun to be cooking with what is available in the kitchen than go buy something and then cook. Ingredients: 2 Cups Whole Wheat flour 2 tsp Baking Powder 1 tsp. baking soda 2 tsp ground cinnamon 1/4 tsp. ground ginger (I grated the ginger fine, by freezing it for a few minutes) 1/2 tsp. garam masala powder 1 1/4 Cup firmly packed brown sugar (add more if you want it sweeter) 1 Cup sour cream 3/4 Cup Vegetable oil 1/2 Cup warm water 1/4 Cup Milk 1 1/2-2 tsp. vanilla extract 3 Cup Carrots, grated Sift whole wheat flour, baking powder, baking soda. Whole wheat Eggless cake

This is my first trial with whole wheat. I am still an amateur in the world of blogging, so didn't think of taking photos or anything, but decided to write about it. One day! Cooking is always been one of my, rather most, favorite of activities. My cooking shows my mood, and relieves my stress and tension too. I love to cook for people, also get jittery when they are literally unknown to my cooking. I have been baking for quite a few years now, started in my college days with old-days mud oven, then on to microwave cakes and now the very 20th century ovens. This doesn't mean am great at baking, just that am still learning. It's not been easy baking cakes when I prefer not to use eggs. So i have to fine tune the recipes to eggless versions.
