Whole wheat eggless carrot spice cake

My friend has a potluck get-together tomorrow, since 'am leaving town the day after, I decided not to buy any new ingredient. I had carrot in the fridge, whole wheat flour and brown sugar. So here I am baking a cake with the ingredients that are available in the kitchen.
It's fun to be cooking with what is available in the kitchen than go buy something and then cook.

Ingredients:
2 Cups Whole Wheat flour
2 tsp Baking Powder
1 tsp. baking soda
2 tsp ground cinnamon
1/4 tsp. ground ginger (I grated the ginger fine, by freezing it for a few minutes)
1/2 tsp. garam masala powder
1 1/4 Cup firmly packed brown sugar (add more if you want it sweeter)
1 Cup sour cream
3/4 Cup Vegetable oil
1/2 Cup warm water
1/4 Cup Milk
1 1/2-2 tsp. vanilla extract
3 Cup Carrots, grated

Sift whole wheat flour, baking powder, baking soda. Combine with cinnamon and garam masala. Now to the wet ingredients. Add each of these ingredients and mix them completely with the dry mixture. First goes brown sugar, then sour cream, oil, and vanilla extract. After all these are mixed well, add carrots and ginger. Mix well. Now add warm water, and then milk and mix everything together.
Pre-heat oven at 350F. Grease and dust a pan. Pour in the cake mixture. Bake for about 30mins or until a skewer comes out clean. Sit the cake for about 10mins to cool down.
Now I have to think up a way to kinda decorate this cake..
Enjoy the yummy very healthy whole wheat carrot cake.. and eggless too!!
